The dense, smooth American style depends on cream cheese, which grew out of the dairy industry in New York state. William A. Lawrence of Chester, New York, made Neufchâtel and cream cheese at a factory there from the 1870s, and the Village of Chester describes itself as the birthplace of cream cheese. Bakers and delis in New York City later made the tall, cream-cheese-based New York cheesecake famous.
